Caviar, widely regarded as one of the world’s most precious gourmet foods,

is made from the unfertilized eggs of sturgeon,

a primitive fish species that has lived on Earth for more than 200 million years.

These ancient fish once thrived in many large river systems

across Eurasia, swimming upstream every year

to find proper gravel beds for spawning.

Sturgeon grow very slowly and reach sexual maturity only after many years,

and each female fish can produce roe just once in several years.

Such slow reproduction makes sturgeon extremely vulnerable

to long-term and excessive fishing pressure.

For centuries, people have chased the high economic value of wild caviar.

Massive overfishing, illegal poaching and unregulated trade

sharply cut down the global wild sturgeon population.

Dam construction along rivers also blocks their migration routes.

Sturgeon can no longer travel to traditional upstream spawning grounds,

which breaks their natural breeding cycle.

Water pollution and habitat degradation add further threats.

Heavy metals and chemical waste accumulate inside sturgeon’s bodies,

reducing their survival rate and affecting the quality of fish roe.

Many sturgeon species are now listed as critically endangered

on the international wildlife protection list.

Strict bans and trade controls have been carried out

to stop the rapid decline of wild sturgeon.

Today, legally sold caviar mostly comes from farm-raised sturgeon.

Sustainable aquaculture helps ease the demand for wild fish,

yet illegal underground poaching still remains hard to eliminate.

Protecting sturgeon is not merely saving a luxury food source.

It means preserving a living fossil in the aquatic world

and maintaining the integrity of river ecosystems

that support countless freshwater creatures.

These ancient fish once thrived in many large river systems across Eurasia,

swimming upstream every year to find proper gravel beds for spawning.

主干:

These ancient fish once thrived in many large river systems

across Eurasia

swimming upstream every year to find proper gravel beds for spawning

Protecting sturgeon is not merely saving a luxury food source.

It means preserving a living fossil in the aquatic world

and maintaining the integrity of river ecosystems

that support countless freshwater creatures.

Protecting sturgeon is not merely saving a luxury food source

It means preserving a living fossil

and maintaining the integrity of river ecosystems

that support countless freshwater creatures
